Ingredients
  

Falafel Base
  • 1 can chickpeas, drained Provides protein and texture.
  • 1 small red onion, chopped Adds sweetness and depth of flavor.

  • 2 tablespoons fresh lemon juice Provides acidity and brightness.

  • 2 tablespoons nutritional yeast Contributes cheesy flavor profile.
  • 1 teaspoon smoked paprika Gives a mild smoky taste.

  • 1 teaspoon salt Essential for enhancing flavors.
  • 1/2 teaspoon black pepper Adds subtle heat.
  • 1/4 cup almond flour Helps bind the mixture together.
  • 1/2 teaspoon baking soda Provides lift for a light texture.

Method
 

Preparation
  1. Place drained chickpeas in a food processor with chopped red onion and minced garlic.
  2. Pulse for about 30 seconds until mostly smooth.
  3. Add lemon juice, chopped parsley, coriander, nutritional yeast, smoked paprika, ground cumin, ground coriander, salt, and black pepper.
  4. Blend until smooth and well combined.
  5. Stir in almond flour and baking soda.
  6. Scoop tablespoon-sized amounts and roll into balls or form patties.
  7. Refrigerate for 30 minutes or freeze for 10 minutes.
  8. Lightly coat each falafel with avocado oil spray.
Cooking
  1. In batches, lay them in the air fryer basket and cook at 375°F for 12-13 minutes, flipping halfway through.
  2. Serve hot and enjoy!

Notes

Can be stored in an airtight container for 2-3 days in the refrigerator or frozen for up to 3 months. Reheat in the air fryer or oven to restore crispiness.
