  • 2 medium Avocados, diced Adds creaminess and rich flavor.

Method
 

Preparation
  1. In a large bowl, combine the chopped shrimp and fresh lime juice. Let stand for 5 minutes until the shrimp turns opaque.
  2. Add the chopped Roma tomatoes, diced red onion, diced jalapeno, and chopped cilantro. Toss the mixture with the shrimp and lime juice.
  3. Cover and refrigerate for 1 hour to allow the flavors to meld.
  4. Just before serving, add the diced avocados, and toss gently. Season with salt and pepper to taste.

Notes

Serve avocado shrimp ceviche cold with tortilla chips or use as a filling for lettuce wraps. For best results, add avocados just before serving to prevent browning.
