  • 1/2 tsp sea salt Enhances flavor.
Wet Ingredients
  • 1 large egg Binds ingredients together.
  • 1/2 cup whole milk Contributes to the batter’s creaminess.
  • 1/2 cup sour cream Ensures a moist texture.
  • 1/4 cup melted butter Adds richness.
  • 1 tsp vanilla Adds warmth and sweetness.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Prepare an 8x8 square baking dish by spraying it with nonstick spray and sprinkling a little sea salt on the bottom.
  3. In a medium bowl, dump the corn muffin mix and smooth out any lumps with a fork.
Mixing
  1. Add in all wet ingredients and whisk until smooth.
  2. Let the batter rest for 5 minutes to allow flavors to meld.
Baking
  1. Pour the batter into the prepared dish evenly.
  2. Bake for 45 to 50 minutes until a tester comes out clean, checking after 35 minutes and tenting with foil if over-browning.
  3. Remove from the oven and let sit for 5 to 10 minutes.
Serving
  1. Cut into squares while still warm and serve with honey butter.

Notes

Consider adding extras like corn kernels or jalapeños for a spicy kick. Always check for doneness early; if left too long, cornbread can dry out.
