Ingredients
  

For the Bruschetta Topping
  • 2 cups Roma tomatoes, diced Freshness brings vibrancy to the dish.

For the Chicken
  • 4 pieces boneless skinless chicken breasts The main protein source, lean and flavorful.
  • 2 teaspoons salt and pepper, to taste Additional seasoning for the chicken.
  • 2 tablespoons avocado or refined coconut oil Ideal for cooking, adds healthy fats.

Method
 

Preparation of Bruschetta
  1. Stir together all bruschetta ingredients in a medium bowl and set aside. If desired, gently pour out excess liquid after a few minutes, if tomatoes are very watery.
Cooking the Chicken
  1. Heat 2 teaspoons of oil over medium heat. Season both sides of chicken breasts with plenty of salt and pepper.
  2. Gently add chicken breasts to the skillet without overcrowding. Cook the first side for 8 minutes without moving.
  3. Flip chicken breasts and cook the second side for 2 to 4 minutes or until cooked through, reaching about 161 to 162 degrees F internal temperature.
  4. Transfer to a plate and let rest for 5 minutes.
Assembly
  1. After resting chicken breasts for 5 minutes, transfer chicken to serving plates and top generously with bruschetta.
Maintaining Moisture
  1. If breasts are large, you may need to add a little chicken broth to the pan during cooking to keep it from getting too dry or crusty.

Notes

To enhance flavor, consider marinating the chicken in olive oil, salt, and pepper for a couple of hours before cooking. For an extra zing, try adding a squeeze of fresh lemon juice over the bruschetta just before serving.
