- In a small bowl, whisk together the broth, hoisin sauce, soy sauce, cornstarch, sesame oil, ginger, and Sriracha sauce. Set aside.
- Place a large sauté pan or wok over medium heat and add 1 tablespoon of olive oil, allowing it to get hot for about a minute.
Cooking
- Add the cubed chicken to the pan, cooking and stirring occasionally until the chicken is fully cooked and no longer pink, which will take about 4-5 minutes. Transfer the chicken to a plate and set aside.
- Heat the pan again, adding the other tablespoon of olive oil. Add the red bell pepper, carrot, red onion, snap peas, mushrooms, and minced garlic, cooking them while stirring constantly until tender but still crisp, about 4 minutes.
- Pour the prepared sauce into the pan and cook, stirring until the sauce thickens to your desired consistency, about 2-3 minutes.
- Return the chicken to the pan. Stir to combine everything well before gently adding the zucchini noodles and cooking for an additional minute, ensuring the noodles are nicely coated with the sauce.
