For topping

Method
 

Preparation and Baking
  1. Preheat your oven to 375°F (190°C) and line a 9 x 13 pan with parchment paper.
  2. In a large mixing bowl, combine flour, powdered sugar, salt, lemon zest, and cold butter, mixing until crumbs form, then form a dough.
  3. Press the dough into the pan and bake for 20 minutes.
  4. Meanwhile, in another bowl, whisk together eggs, sugar, flour, baking powder, lemon juice, and zest until frothy.
  5. Pour the lemon curd mixture over the baked crust and reduce oven temperature to 350°F (175°C), baking for an additional 25 minutes.
  6. Once baked, cool on a wire rack for 30 minutes, then refrigerate for 1 hour before dusting with powdered sugar.
Serving
  1. Slice into squares and serve on a platter with fresh berries or whipped cream.

Notes

Ensure your butter is cold for a flaky crust. Use fresh lemons for the best flavor. Let the bars cool completely before slicing for cleaner edges.
