  • 1 cup gluten-free oat flour Acts as the base for the fritters.

  • 1/4 tsp black pepper Adds a touch of heat.
Wet Ingredients
  • 1 cup fresh corn kernels The star ingredient.
  • 1/4 cup green onions Offers a mild onion flavor.
  • 1 large egg Binds the ingredients together.
  • 1/2 cup unsweetened plain almond milk Adds moisture without dairy.
  • 2 tbsp avocado oil or neutral high-heat oil For frying.
For Serving
  • 1/2 cup sour cream For serving.
  • 1/4 cup thinly sliced green onions For garnish.

Method
 

Preparation
  1. In a large bowl, add the flour, starch, baking powder, garlic powder, onion powder, salt, and black pepper. Whisk until combined.
  2. Stir in the corn and green onions. Then add the egg and almond milk and mix until just combined.
Cooking
  1. Skillet Method: Heat a skillet over medium-high heat. Add enough oil to coat the bottom of the pan. Once hot, scoop mounds of batter into the pan, flatten slightly, and cook for 2-3 minutes on each side until golden and crispy.
  2. Air Fryer Method: Preheat air fryer to 380°F. Scoop mounds into the basket, flatten, spray with oil, and air fry for about 15-18 minutes, flipping halfway.
  3. Oven Method: Preheat oven to 425°F. Line a baking sheet with parchment. Place fritters, spray with oil, and bake for 18-20 minutes, flipping halfway.
Serving
  1. Serve warm with a dollop of sour cream and a sprinkle of green onions.

Notes

Use fresh corn for optimal sweetness. Allow the batter to rest for a few minutes before cooking. Cook in batches to avoid overcrowding.
