  • 16 pieces frozen dinner rolls The base for the focaccia, creating a fluffy texture.
  • 1/4 cup extra virgin olive oil Adds richness and helps the focaccia crust develop.
  • 2 tablespoons fresh thyme leaves Provide aromatic flavor that enhances the bread.
  • 1 teaspoon coarse salt Brings out the flavors and provides a subtle crunch on top.

Method
 

Preparation
  1. Line a 6-quart crockpot with parchment paper.
  2. Arrange the frozen dinner rolls in the bottom of the crockpot, leaving space between them.
  3. Cover and set on warm for 1 and 1/2 to 2 hours, or until doubled in size.
Cooking
  1. Drizzle with the olive oil, then use your fingers to gently poke and press down the dough.
  2. Sprinkle the thyme, salt, pepper, and Parmesan over the top.
  3. Cover and cook on high for 1 to 1 and 1/2 hours.
  4. Turn the crockpot off, but let stand covered for 30 minutes.
Serving
  1. Lift the focaccia out from the crockpot, slice, and enjoy.

Notes

For best results, let the focaccia rest after cooking. Feel free to experiment with different toppings such as olives, sun-dried tomatoes, or feta cheese.
