Ingredients
  

For the Soup Base
  • 2 tablespoons Olive oil (or avocado oil, or ghee) For sautéing vegetables.
  • 2 medium Medium carrots, peeled and diced Provides sweetness and texture.
  • 1 large Large onion, diced Adds depth of flavor.
  • 3 cloves Fresh garlic cloves, minced For aromatic goodness.
  • 1 cup Uncooked brown rice Adds heartiness.
  • 3 cups Chicken or turkey bone broth Infuses the soup with rich flavor.
  • 1 cup Frozen organic peas, rinsed and thawed For bursts of sweetness.
  • 1 tablespoon Fresh dill or 1 teaspoon dried dill weed For a refreshing herbaceous note.
  • 1 whole Fresh lemon, juice and zest For brightness and acidity.
  • 1 cup Unsweetened coconut milk or almond milk Adds creaminess without dairy.
  • 2 tablespoons Gluten-free flour (Arrowroot powder, or cornstarch) Used as a thickening agent.
  • to taste teaspoon Sea salt and ground pepper Enhances overall flavor.
  • 2 cups Leftover turkey, chopped The star ingredient providing protein.

Method
 

Preparation
  1. In a large stockpot or Dutch oven, heat your chosen oil over medium heat.
  2. Add in all of your chopped veggies and sauté the carrots, onion, and garlic for 3-4 minutes.
  3. Incorporate the broth and brown rice, then reduce your heat to a low simmer and cover with a lid.
  4. Let it cook until the rice is tender, about 25 minutes.
  5. Meanwhile, in a small bowl, whisk together the almond milk and flour/cornstarch until no lumps are visible.
  6. Once your rice is tender, stir in the milk mixture, turkey, and peas.
  7. Continue to simmer for 5-8 minutes, or until the soup thickens a bit.
  8. Stir in your fresh lemon juice, zest, and dill, then taste test and adjust seasoning with sea salt and pepper if desired.
  9. Serve hot and enjoy!

Notes

This soup is great for meal prep and can be stored in an airtight container in the fridge for up to 3-4 days. Freezes well for 2-3 months.
