Ingredients

  • 1 cup Heavy cream Provides the sauce’s creamy texture.
  • 1 cup Parmesan cheese Freshly grated cheese melts beautifully into the sauce.
  • 1 tsp Italian seasoning An optional addition for extra flavor depth.
  • to taste Salt and pepper Essential for seasoning the sauce to taste.
  • pinch Nutmeg A traditional touch that brings warmth to the dish.
  • to garnish Fresh parsley For a pop of color and fresh flavor (optional).
For Serving
  • 12 oz Fettuccine Or any pasta of choice for serving.

Method
 

Cooking the Pasta
  1. Cook the pasta according to package directions in salted water. Reserve ½ cup of the pasta water before draining.
Making the Sauce
  1. Melt the butter in a large skillet or saucepan over medium heat. Add the garlic (if using) and cook for about 1 minute, just until fragrant.
  2. Slowly pour in the heavy cream, whisking constantly. Bring to a gentle simmer and cook for 3–4 minutes until slightly thickened.
  3. Reduce the heat to low and gradually whisk in the Parmesan cheese until smooth and creamy.
  4. Season with salt, pepper, Italian seasoning, and a pinch of nutmeg. Taste and adjust as needed.
  5. Toss the cooked pasta directly into the sauce, adding a splash of reserved pasta water if needed to loosen it up and thin the sauce.
  6. Serve immediately, topped with extra Parmesan and parsley if desired.

Notes

For best results, use high-quality ingredients, especially freshly grated Parmesan. Adjust the seasoning to your taste and serve immediately for the best flavor.
