Method
 

Preparation
  1. Preheat your oven to 400 degrees F and line a large rimmed baking sheet with parchment paper.
  2. Prep and place all your vegetables into an extra large bowl.
  3. In a small bowl, whisk the avocado oil with the lemon juice, lemon zest, garlic, herbs, sea salt, and pepper.
  4. Drizzle the oil mixture over your veggies and toss well to evenly coat.
  5. Transfer the vegetables onto your prepared sheet pan and arrange in a single layer.
Cooking
  1. Place the pan into the preheated oven and roast for about 30-40 minutes, stirring once halfway.
  2. The veggies are ready when they are tender and have a nice golden-brown color on the sides.
  3. Garnish with fresh herbs if desired.
Storage
  1. Store leftovers in a sealed container in the fridge for up to 4 days.
  2. Reheat in an air fryer to crisp them up again.

Notes

To achieve perfect roasted veggies, cut all vegetables into similar sizes and don't overcrowd the baking sheet. For maximum flavor, ensure to include garlic and herbs. Broil for a few minutes at the end for added crunch.
