Greek Chicken Gyros with Tzatziki

Ingredients
  

For the Chicken Marinade
  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup Greek yogurt For marinating
  • 2 tbsp extra-virgin olive oil Enhances flavor
  • 2 cloves garlic Minced
  • 2 tsp dried oregano Key herb for flavor
  • 1 tsp ground cumin Adds warmth
  • 1 tsp smoked paprika For smokiness
  • 1 medium lemon Zested and juiced
For the Tzatziki Sauce
  • 1 large Lebanese cucumber Grated and excess liquid squeezed out
  • 1 cup Greek yogurt
  • 2 cloves garlic Minced
  • 2 tbsp fresh dill
  • 2 tbsp fresh mint
  • 2 tbsp fresh lemon juice
  • 1 tbsp extra-virgin olive oil
  • 1 pinch salt
  • 1 pinch pepper
For Assembling Gyros
  • 4 pieces Greek pita breads Warm
  • 2 medium tomatoes Sliced
  • 1 medium red onion Sliced
  • 2 cups shredded lettuce
  • 1/2 cup feta Crumbled
  • 1 lemon wedges For serving

Method
 

Preparation
  1. In a large bowl, whisk together Greek yogurt, olive oil, garlic, oregano, cumin, paprika, lemon zest, juice, salt, and pepper.
  2. Add the chicken and toss well to coat. Cover and refrigerate for 1 to 24 hours.
Cooking
  1. Grill the chicken on a BBQ or grill pan for 4–6 minutes per side or roast in the oven at 220 °C (425 °F) for 18–20 minutes, flipping halfway. Rest and slice thinly.
  2. For the tzatziki, grate the cucumber, squeeze out excess liquid, and combine with Greek yogurt, garlic, dill, mint, lemon juice, olive oil, salt, and pepper. Refrigerate for at least 30 minutes.
Assembly
  1. To serve, spread tzatziki over warm pita, layer on the chicken, tomatoes, onions, lettuce, and wrap it up.

Notes

For best flavor, marinate the chicken for at least 12 hours. Warm pita enhances texture.
