For the Marinade

For the Burritos
  • 1 pound boneless skinless chicken breasts Main protein.

  • 2 tablespoons juice of limes Provides zesty acidity.
  • 1/2 cup red onions Adds crunch and sweetness.
  • 1 can canned black beans Adds protein and fiber.

  • 4 large burrito sized flour tortillas Holds all fillings together.

Method
 

Preparation
  1. Prepare the marinade by combining soy sauce, water, vinegar, garlic, pepper, brown sugar, and bay leaves in a glass baking dish and mixing well.
  2. Marinate the chicken by adding chicken breasts to the marinade, turning to coat. Cover and refrigerate for 4-6 hours.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken for 3-5 minutes on each side, or until fully cooked.
  5. Remove chicken from grill and let cool, then shred with forks.
  6. In a medium saucepan, add water and bring to a boil.
  7. Add rice to boiling water, stir, and return to a boil.
  8. Reduce heat to low, cover, and simmer rice for 15 minutes.
  9. Remove from heat, let sit for 5 minutes, then fluff the rice.
  10. In a large mixing bowl, combine the shredded chicken, rice, cilantro, and lime juice.
  11. Warm the tortillas according to package instructions.
  12. Assemble the burritos by dividing the filling mixture among the tortillas, top with black beans and chopped tomatoes.
  13. Fold the bottom edge of the tortillas over the filling, tuck in the sides, and roll tightly.

Notes

Customize the burritos with toppings like salsa or guacamole. Perfect for meal prep and can be frozen.
