For the Potatoes
  • 2 lbs Potatoes Yukon Gold or red potatoes recommended
  • 2 tbsp Avocado oil or olive oil For roasting the potatoes
  • 1 tsp Sea salt Enhances flavor
  • 1 tsp Garlic powder For added flavor
  • 1/2 tsp Freshly ground black pepper Provides subtle heat
For the Sauce
  • 1 medium Onion Adds sweetness and depth to the sauce
  • 2 cloves Fresh garlic cloves Provides robust flavor
  • 1 can High-quality chopped tomatoes Forms the base of the sauce
  • 1/2 cup Fresh cherry tomatoes Adds brightness
  • 1/2 tsp Chili flakes To add heat
  • 1 tsp Smoked paprika For a smoky flavor
  • 1 tbsp Balsamic vinegar Adds acidity
  • 1 tbsp Raw honey Provides sweetness
  • 1/4 cup Freshly chopped parsley Used as a garnish

Method
 

Preparation
  1. Preheat your oven to 425 degrees F and line a large baking tray with parchment paper.
  2. Bring a large pot of salted water to a boil.
  3. Carefully add the chopped potatoes and simmer for 3 minutes. Drain really well and transfer them to the prepared baking tray.
  4. Drizzle the potatoes with oil and sprinkle with sea salt, garlic powder, and pepper. Toss and arrange in a single layer.
Cooking
  1. Bake the potatoes for 40-45 minutes, or until they are nicely crisp and golden.
  2. While the potatoes are baking, prepare your sauce by sautéing onions and garlic, then adding chopped tomatoes, cherry tomatoes, chili flakes, smoked paprika, balsamic vinegar, and honey. Let simmer until thickened.
  3. Serve the crispy potatoes hot with the sauce and garnish with freshly chopped parsley.

Notes

Serving suggestions include pairing with aioli or spicy tomato sauce. For meal prep, potatoes can be cut and stored in water, and sauce can be made ahead.
