Method
 

Preparation
  1. Preheat the oven to 350 degrees F.
  2. Grease a 9Ă—5-inch loaf pan with butter to prevent sticking.
  3. In a small bowl, whisk together the flour, baking powder, salt, and lemon zest.
  4. In an electric mixer, cream the butter, ricotta cheese, and sugar until light and fluffy, about 3 minutes.
  5. With the mixer running, add each egg individually, blending until fully incorporated.
  6. Mix in the vanilla extract and fresh lemon juice.
  7. Gradually add the flour mixture and beat until just blended.
  8. Pour the batter into the prepared loaf pan, smoothing the top if necessary.
Baking
  1. Bake in the preheated oven for 45-50 minutes until the edges are pulling away and a toothpick inserted comes out clean.
  2. Allow the cake to cool in the pan on a wire rack for about 10 minutes before transferring to a wire rack to cool completely.
