Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and spray a 9 x 13-inch casserole dish with nonstick cooking spray, then set aside.
  2. In a large bowl, combine softened cream cheese, shredded pepper jack cheese, sour cream, diced red onion, chopped fresh cilantro, lime juice, Tajin, garlic powder, onion powder, Chile powder, salt, and black pepper until smooth.
  3. Stir in shredded cooked chicken, thawed corn, and diced green chiles until evenly mixed.
  4. Pour the mixture into the prepared baking dish and spread it out evenly.
Baking
  1. Place the baking dish in the oven and bake uncovered for 35-40 minutes, until the top is lightly browned and bubbling.
  2. Once baked, remove from the oven and top with crumbled cotija cheese or queso fresco. Add more Tajin and fresh cilantro if desired, then serve hot.

Notes

For best results, mix the creamy base well to distribute spices evenly. Use freshly squeezed lime juice for better flavor. Cover with foil during the last 10 minutes of baking if needed to prevent over-browning.
