Preparation
  1. Prepare a small bowl of ice water for shocking the basil.
  2. Bring a saucepan of water to boil.
  3. Add the basil leaves to the boiling water. Blanch for 4 seconds and then plunge into the ice water.
  4. Drain the blanched basil and pat dry with paper towels.
  5. In a food processor, process the walnuts and grated parmesan until ground.
  6. Add the blanched basil, salt, and black pepper. Process until blended.
  7. Gradually incorporate the olive oil while processing to achieve the desired consistency.
  8. Store the pesto in an airtight container in the refrigerator.

Notes

This pesto sauce is perfect for tossing with pasta, spreading on sandwiches, or drizzling over grilled meats. It can be stored in the refrigerator for up to a week or frozen in an ice cube tray for longer storage.
