Method
 

Preparation
  1. Grate the butternut squash and squeeze out excess moisture.
  2. In a mixing bowl, combine the grated squash with onion, egg, cheese, flour, salt, pepper, and parsley.
  3. Shape the mixture into well-formed patties.
Cooking
  1. Heat olive oil in a frying pan over medium heat.
  2. Fry the patties until browned and crispy on both sides.
  3. Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.
Serving
  1. Serve hot, optionally with a mixture of mayonnaise and chopped parsley.

Notes

For best results, use a box grater for consistent texture when grating squash. Squeeze out moisture thoroughly to prevent sogginess.
