Preparation
- Prepare the pumpkin. Peel the pumpkin skin and dice it into half inch pieces.
- Sauté the cumin seeds. Press SAUTE on Instant Pot. Add oil to the pot. Once hot, add cumin seeds, let them splutter.
- Add ginger and onions. Next, add minced ginger, green chili, and onions. Sauté until onions turn light brown.
- Add pumpkin and spices. Then add diced pumpkin, dry spices (turmeric powder, red chili powder, coriander powder, salt), water, and mix well.
- Pressure cook the mixture. Deglaze the pot. Close the lid on the pot. Set it to MANUAL/PRESSURE COOK (High Pressure) for 3 minutes.
- Release the pressure. When it beeps, do a QUICK RELEASE.
- Finish with spices. Remove the lid, add garam masala and amchur powder, mix well. Add sugar if the pumpkin is not sweet (optional).
- Adjust consistency if needed. If there's excess water, turn on SAUTE mode and cook for 1-2 minutes to get the right consistency.
- Garnish and serve. Garnish with coriander leaves and serve hot with chapatis, roti, and parathas.
Alternate Cooking Methods
- Stovetop pressure cooker method. Follow the Instant Pot method but give 1-2 whistles and let the pressure release naturally.
- Stovetop Kadai pan method. Follow the Instant Pot method, cover with a lid, and cook on low flame until the pumpkin gets soft (5-7 minutes), stirring occasionally.
- Final touches. Once cooked, add garam masala, amchur powder, and garnish with cilantro.
- Serve as desired. Serve as a side with roti, chapati, or rice.
- Make ahead. The curry can be made a day before and reheated. Store leftovers in an airtight container for 2-3 days or freeze for up to 1 month.
- Reheat properly. Reheat in microwave or stovetop until warm.
Notes
Pumpkin Spices is versatile and can be adjusted to suit various tastes. Adding coconut milk enhances creaminess. For added protein, consider chickpeas or lentils. It's vegan-friendly; just ensure all ingredients are plant-based.
