  • 1 teaspoon whole peppercorns Adds a subtle spiciness.
For the Onions
  • 2 medium red onions The main ingredient that provides sweetness and color.
  • 1 lime lime, sliced Infuses a fresh citrus flavor.

Method
 

Preparation
  1. In a pot, add the apple cider vinegar, filtered water, sea salt, sugar, and peppercorns, and stir to mix.
  2. Bring the mixture to a boil for two minutes, allowing the flavors to meld.
  3. Add the sliced red onions and boil for one minute to soften them slightly.
  4. Remove the pot from heat and let it cool for one minute.
  5. Pour the mixture into a mason jar, ensuring the onions are completely submerged in the liquid.
  6. Add lime slices into the jar and swirl to combine all ingredients.
  7. Let the mixture cool to room temperature, then seal the jar with a lid.
  8. Refrigerate and enjoy immediately or allow to sit for a few days for deeper flavor.

Notes

Thinly slice the onions for quicker pickling and better absorption of flavors. Storing in the fridge for at least 24 hours enhances taste.
