  • 4 cups Shredded fresh zucchini About 2 medium zucchini
  • 2 tablespoons Olive oil or avocado oil Adds healthy fats

  • 2 cloves Garlic, minced Infuses the dish with flavor
  • 1 teaspoon Sea salt Enhances flavor
  • 1/2 teaspoon Ground pepper Add more to taste
  • 1/4 teaspoon Chili flakes Adjust to taste
  • 1 cup Mozzarella cheese, shredded Provides creaminess
  • 1/2 cup Parmesan cheese, grated Adds nuttiness and richness

Method
 

Preparation
  1. Grate the zucchini using a food processor or a hand grater.
  2. Sprinkle the grated zucchini with salt and let it sit in a colander for about 15 minutes.
  3. After 15 minutes, blot the zucchini with paper towels to remove excess moisture.
  4. Squeeze out as much liquid as possible from the grated zucchini.
Cooking
  1. In a large skillet, heat the olive oil and butter over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the grated zucchini to the skillet and cook, stirring frequently, for about 6 minutes.
  4. Season with salt, pepper, and chili flakes to taste.
  5. While still on the heat, sprinkle the zucchini with shredded mozzarella and grated Parmesan cheese. Stir until the cheese melts.
  6. Serve hot and enjoy!

Notes

This dish can be made ahead, but it’s best enjoyed fresh. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
