Method
 

Preparation
  1. Combine diced tomatoes, black beans, chicken broth, green chiles, onion, garlic, cilantro, lime juice, and cumin in the slow cooker.
  2. Place the boneless skinless chicken breasts on top of the mixture in the slow cooker.
Cooking
  1. Cook on low for 6 to 8 hours or on high for 4 to 6 hours until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
  2. Once cooked, carefully remove the chicken from the slow cooker and shred it using two forks.
  3. Add the shredded chicken back into the slow cooker and stir to combine it with the other ingredients.
  4. Add salt and black pepper to the dish according to preference, stirring well.
  5. Allow the dish to cook for an additional 30 minutes to thicken and deepen flavor.
Serving
  1. Serve over rice or cilantro lime quinoa, enjoying the possibility of using leftovers for tacos, burritos, salads, nachos, or tostadas!
