Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C) and line a cookie sheet with parchment paper.
  2. In a large mixing bowl, beat together 1 1/4 cups sugar and butter until light and fluffy.
  3. Beat in the egg yolks one at a time.
  4. Stir in the vanilla extract.
Mixing
  1. In a separate bowl, whisk together the flour, baking soda, salt, and cream of tartar. Gradually fold into the butter mixture.
  2. Stir in green gel food coloring.
Chilling and Baking
  1. Refrigerate the dough for 20 minutes.
  2. Scoop 1.5-inch balls of dough and roll in the remaining 1/2 cup sugar.
  3. Arrange on the prepared cookie sheet.
  4. Bake for 12 to 13 minutes until set but soft in the center.
  5. Let cool on the cookie sheet for 2 minutes before transferring to a wire rack.
