Preparation
  1. Preheat your oven to 425°F (220°C) to achieve that perfect cooking temperature.
  2. Pat the chicken wings dry with paper towels to remove excess moisture, crucial for crispiness.
  3. In a bowl, mix together baking powder, pepper, ginger paste, garlic paste, and chilli flakes.
  4. Coat the wings evenly with this mixture, ensuring every piece is well covered.
  5. Drizzle neutral oil over the wings, tossing to combine it all together.
Cooking
  1. Arrange the wings in a single layer on a baking sheet lined with parchment paper.
  2. Bake for 30-35 minutes, turning halfway through until they are golden brown and crispy.
  3. While they bake, prepare the tamarind glaze by mixing tamarind paste, honey, and brown sugar in a saucepan.
  4. Bring the mixture to a simmer and cook for about 5 minutes until slightly thickened.
Serving
  1. Once the wings are crispy and perfectly cooked, remove them from the oven and coat with the tamarind glaze.
  2. Toss to ensure each wing is evenly covered in the flavorful glaze.
