Ingredients
  

For the Marinade

For Garnishing

Method
 

Preparation
  1. In a small bowl, whisk together all marinade ingredients except chicken, peanuts, and cilantro.
  2. Place chicken in a large dish or bag, add marinade, and refrigerate for at least 4 hours or up to 24 hours.
Grilling
  1. Preheat grill to medium-high (approximately 375°F).
  2. Remove chicken from marinade and thread onto skewers.
  3. Grill skewers for 6-8 minutes, turning occasionally, until chicken is fully cooked.
  4. Remove skewers from grill, sprinkle with chopped peanuts and cilantro, and serve with peanut sauce.
Peanut Sauce Preparation
  1. In a small bowl, combine rice vinegar, soy sauce, lime juice, honey, and garlic; whisk until combined.
  2. Add peanut butter, salt, and red pepper flakes; whisk until smooth.

Notes

Marinate overnight for best flavor. Mix in colorful vegetables like bell peppers for added nutrition. Make sure your grill is preheated for best results.
