Method
 

Preparation
  1. Prepare the tofu by crumbling the pressed block into chunks about the size of quarters.
  2. Make the dressing by whisking together the vegan mayonnaise, dijon mustard, almond extract, and lemon juice.
  3. Add in the crumbled tofu and remaining ingredients to the dressing and stir to combine.
  4. Serve on your favorite bread or eat as is! Store in an airtight container for up to 3 days.

Notes

For best results, press the tofu before crumbling and use fresh ingredients. Allow the salad to chill in the fridge for at least an hour to deepen the flavors.
