  • 2 cups white rice Day-old rice is preferred for better texture
  • 1 tablespoon canola oil For cooking
  • 1 cup onion, chopped Adds sweet and savory flavor
  • 1 cup carrot, chopped Brings natural sweetness and color
  • 2 cloves garlic, minced Enhances aroma and taste
  • 1 cup green onions, chopped Adds freshness and mild onion flavor
  • 1 cup frozen peas Provides pops of color and sweetness
  • 3 tablespoons soy sauce Offers a savory, umami flavor
  • 1 tablespoon toasted sesame oil Enhances the dish with nutty notes
  • to taste Salt & Pepper For seasoning
  • 1 large egg, optional For added protein and richness

Method
 

Preparation
  1. Prepare the rice by breaking apart any clumps if using day-old rice.
  2. Heat the wok or skillet with 1 tablespoon of canola oil until it starts to smoke.
  3. Add the rice and stir consistently to toast for about 3 minutes.
  4. Create a space in the center of the pan, add remaining ½ tablespoon canola oil, then add the chopped vegetables except for frozen peas. Cook for 1 minute then mix with the rice.
  5. If adding an egg, move the rice and vegetable mixture to one side of the pan, add ½ tablespoon of oil, scramble the egg in the pan, then mix with the rice.
  6. Add the soy sauce and toasted sesame oil, stir to coat. Adjust salt and pepper to taste.
  7. Add the frozen peas and stir for 1-2 minutes until warmed through, then remove from heat and serve.

Notes

Serve with extra green onions or sesame seeds for garnish. Great for meal prepping; store in an airtight container in the refrigerator for up to four days.
