  • 1 lb bone-in skinless chicken breast Main protein for the chili.

Method
 

Preparation
  1. Combine the seasonings in a bowl.
  2. Melt butter in a pot over medium heat, add onion and jalapeno, and cook for 5 minutes.
  3. Add garlic and flour, then cook for 2 minutes.
Cooking
  1. Stir in chicken broth and half and half.
  2. Add seasonings, hot sauce, Worcestershire sauce, and green chilies; bring to a boil, then simmer gently for 15 minutes.
  3. Add chicken and corn, simmer for another 15-20 minutes.
  4. Shred chicken and stir in cream cheese.
  5. For crock pot method, sauté onion and jalapeno, add to crock pot with chicken and remaining ingredients, and cook on low for 8 hours or high for 4.
  6. Finally, shred chicken and stir in cream cheese before serving.
Serving Suggestion
  1. Serve with cornbread and various toppings like lime wedges, avocado, sour cream, tortilla strips, Fritos, and cheese.

Notes

For best results, use bone-in chicken for richer flavor. Adjust spice levels to taste and let guests customize their toppings.
